Our grapes are hand picked to avoid bruising or damage during harvesting. Grapes are then crushed within the hour in order to reduce the possibility of spoilage and fruit shock.
The wine produced is filtered using natural methods, eliminating the possibility of stripping tannins, colour and flavour profiles, consequences that can result from conventional filtering methods.
The wine is matured in French oak barrels for a minimum of 12 months. Allowing a bottle to mature for a further 3 to 5 years before drinking will enhance the rich flavour notes, for an ethereal sensory experience.
